MY FOOD STYLE IS? Neopolitan homestyle cooking, the way you'd cook at home. Our grandmother, who started the restaurant in Newark, was from Naples so this is her style. PROUDEST MOMENT? Winning the Best Pizza in NJ this year. That was really something. WE CAN’T COOK WITHOUT? Garlic and basil. FAVORITE DISHES? Chicken Savoy and Chicken Arnold. CHEFS I [Barbara] ADMIRE? Giada De Laurentiis. I love her simple and healthy approach to food. HOW DO WE NAME OUR DISHES? Many are named after our customers who ask for something special. Rigatoni Jake is after a young man who started coming in when he was a baby in a car seat. He now has a career in New York City but still comes to visit us. MY FOOD STYLE IS? Traditional Jamaican cuisine with a flair. I CAN’T COOK WITHOUT? Jamaican rum – it heightens flavors. We put it in biscotti, cupcakes, pancakes, rum cake and more. FAVORITE ITEM ON THE MENU? Jamaican patties, made from scratch. We offer vegan, chicken and beef. WHY I'M A RESTAURANT OWNER? When we moved here in 2016, my daughter, who was 6 and is nicknamed K-K, suggested that I open a cafe. It resonated with me and by dinner we had chosen a name and the next day I registered the business. It's been a whirlwind ever since. WHO I WOULD LOVE TO COOK FOR? Usain Bolt, the Olympic sprinter. To me, he embodies entrepreneurship and the Jamaican spirit to never give up. I would make him a five-course dinner including shrimp in coconut sauce, sweet potoato pudding and coffee bans. MY DREAM DINNER GUESTS? I'd host a dinner party to include the prime minister and town clerk of Jamaica, Oprah, the village president of South Orange [Sheena Collum] and Bill Clinton, who follows a vegan diet. I'd like to give them all an experience to carry home and share.
