feature story / 29 1. Mix the lime juice, oil, spices and salt in a bowl or shallow baking dish. Add the chicken and toss the pieces to coat. Set aside to mari- nate 15 – 20 minutes while you prepare the other ingredients, or cover and refrigerate up to three hours. 2. Put the sour cream in a small bowl and crumble in the goat cheese. Stir until the mixture is blended. 3. Scoop the avocado flesh into a bowl and add the lime juice and ½ teaspoon salt. Lightly mash with a potato masher or wooden spoon. Taste for seasoning and add more lime juice or salt. 4. Heat an outdoor grill to medi- um-high or an oiled heavy grill pan or cast-iron skillet indoors on the stovetop (be sure to use your ex- haust fan or open a window). Cook the chicken, turning frequently until cooked through, about 7 min- utes per side. Let the chicken rest 10 minutes, then slice or chop into bite-size pieces. 5. To make the tacos, put one or two lettuce leaves on each tortilla. Put a spoonful of guacamole on the lettuce. Arrange the chicken on top. Top with the crema, salsa and any additional garnishes. The spiced chicken can be seasoned and marinated up to 3 hours ahead of cooking. Once cooked, keep the chick- en refrigerated 3 – 5 days. Slice when ready to serve. Briefly reheat for a min- ute in the microwave if you prefer. Homemade guacamole is really easy to make, but don’t let that task stand in the way of making tacos. Choose your favorite prepared guac and carry on. Even if you use prepared salsa or other condiments to make things eas- ier, have some fun and personalize ad- ditional garnishes: Fresh herbs, sliced jalapenos, cooked beans, thinly sliced radishes or carrots, tomato, avocado and grated cheese are all great choices. To heat tortillas, hold them with a pair of tongs over a gas flame on your stovetop for about 30 seconds on each side. Or wrap tortillas in a kitchen towel, pile on a plate and heat in a mi- crowave on high for 15 – 30 seconds, until soft and warm.
