I quit art school because I fell in love 
with cooking while working for a cater­
er. Although I have family in the food 
business, most notably Danny Meyer, I 
never imagined I'd be a chef. I eventu­
ally attended culinary school and worked 
in lots of kitchens before opening True 
Salvage Kitchen. I love that every day 
is different: the food, events, the people. 
And unlike the art world, you get imme­
diate satisfaction when you cook. All of 
my dishes are gluten-free, but I also love 
creating dairy-free or vegan options. Be­
ing able to visualize taste in my head 
helps me create dishes that customers 
love. I describe our food as cozy grandma 
food but better than you remember.”

“
I have loved Disney since I was 14 
when I first went to Disney World with 
a friend and her family. I have taken a 
Disney vacation every year with family 
and friends as a Disney Vacation Club 
member. A few years ago, one of my co-
workers noticed my passion for Disney 
and suggested I become a Disney travel 
agent so I could monetize a lifelong in­
terest. When clients work with me to 
plan a Disney theme park or cruise va­
cation, they tap into my personal expe­
rience, insider knowledge and planning 
expertise, all for free. Families can rely 
on me to help them create magical vaca­
tions without the stress. I can help them 
time their vacation according to Disney 
events, book restaurants and character 
meet and greets, utilize lightning lanes 
to get on the rides and attractions they 
want, and choose a cruise ship that's 
most appealing to them. I love sharing 
what I know and helping families make 
the most of every Disney adventure.”

LIFE'S LESSONS
“
My (Bethany’s) roots in business 
began with my mother’s fitness studio. I 
started teaching there when I was just 15. 
Seeing what it took to build a successful 
business gave me confidence when we 
opened Studio 509. I’m grateful to have 
turned something I learned early on into 
a career I love. For me (Guada), dance 
was the vehicle that taught me about life. 
It's how I learned discipline, consisten­
cy, collaboration and the importance of 
community, lessons that guide me in life 
and at the studio. For both of us, our cu­
riosity about movement and the body led 
us to the GYROTONIC® technique. We 
love it because it incorporates a number 
of movement styles that we can use at 
the studio to help people prevent inju­
ries, recover and reach their potential. 
Besides our group and private classes, 
it's another tool that enables us to help 
people move well in their bodies.”
